Root Beer Marshmallows
Regular readers of my blog will know that I’ve had a recent obsession with marshmallows. I first realized how simple marshmallows are to make. Then I realized the versatility of this simple candy with peanut butter and jelly marshmallows. My sister-in-law Val suggested root beer marshmallows. She thought they would taste like a root beer flow. She was absolutely right. Here’s the recipe:
Root Beer Marshmallows:
- 2 liters root beer
- 3/4 oz. gelatin (3 packets or 8 sheets)
- 1/2 c. cold water
- 1/2 c. corn syrup
- 1/4 c. granulated sugar
- Pinch salt
- 1 Tb. root beer extract
- Powdered sugar, as needed
- Whipped topping, as needed
Pour the root beer into a large saucepan and heat over moderate flame. Bring to a boil and reduce to 1 ½ c. Pour into a shallow container and allow to cool.
Combine the gelatin and cold water in the bowl of stand mixer. Allow to bloom while you prepare the sugar syrup. Combine root beer syrup, corn syrup, and sugar in a small saucepan. Bring to a boil over medium heat, stirring occasionally. Add boiling syrup to gelatin and whip on high for 10 minutes. Add salt and root beer extract and whip to incorporate. Transfer marshmallow to a half pan lined with greased plastic wrap. Lay another piece of greased plastic wrap on top and press into a uniform slab. Allow to set for three hours and cut into 1½” cubes. Toss in powdered sugar. Serve marshmallows with a dollop of whipped topping. This recipe will make about 40 large marshmallows

maybe flavor the whipped topping with vanilla bean?? also this might be good on top of a bourbon /root beer marinated pork loin and tehn hit with a flame to melt/toast
